쇼핑몰의 통로는 멈추지 않는 자리입니다. 사람은 걷고, 지나가고, 잠깐 눈을 둡니다. 우리는 이 흐름을 붙잡는 대신 흐름 위에 한 면을 놓기로 했습니다. 문을 세우지 않고 벽을 만들지 않고, 면 하나로 매장을 대신하는 것.

한 입이라는 이름에서 우리의 역할은 매장을 꾸미는 데 있지 않고 통로와 상품 사이의 거리를 줄이는 데 있도록 두었습니다. 통로를 따라 길게 놓인 흰 대리석 면은 파사드이자 진열대이자 계산대가 됩니다. 하나의 면이 매장 전체를 대신하고, 들어오지 않아도 무엇을 파는지 보입니다. 매장을 인지시키는 것은 간판의 크기가 아니라 상품까지의 거리입니다.

몰 안은 조명이 많고 재료가 뒤섞여 소란스럽습니다. 흰 대리석은 무늬를 더하지 않고 자기 면만 밝게 남습니다. 옆 매장과 다투지 않으면서 먼저 보이는 방법은 색을 더하는 것이 아니라 면을 비우는 것이었습니다.

몰의 천장은 어둡고 설비가 지나가는 자리입니다. 이 매장의 천장만 우드 플로링으로 덮었습니다. 통로에서 올려다보면 따뜻한 덩어리 하나가 떠 있고, 벽이 없어도 천장이 경계가 됩니다.

앉는 자리는 검은 프레임의 유리로 둘렀습니다. 소리와 움직임은 한 겹 걸러지고 시선은 그대로 통과합니다. 안에서 먹는 사람이 밖에서 보이고, 그 장면이 이 크기의 매장에서는 가장 좋은 진열이 됩니다.

A mall aisle is a place that does not stop. People walk, pass by, rest their eyes for a moment. Rather than holding that flow, we chose to lay a single plane upon it — no door, no wall, one surface standing in for the shop. [One Bite] : the shortest meal there is — choose, receive, finish; a unit of time rather than a quantity of food. Under the name One Bite, we placed our role not in decorating the shop but in shortening the distance between the aisle and the goods. The long plane of white marble set along the aisle becomes facade, display and counter at once. One surface stands in for the entire shop, and what is sold is visible without entering. What makes a shop register is not the size of the sign but the distance to the goods. A mall interior is noisy with light and mixed materials; white marble adds no pattern and simply stays bright on its own terms. The way to be seen first without competing with the shops beside it was to empty a surface rather than to add colour. Mall ceilings are dark and given over to services. Only this ceiling was covered in wood flooring; looked up at from the aisle, one warm mass floats there, and with no walls the ceiling becomes the boundary. The seating is enclosed in glass in slim black framing. Sound and movement are filtered by one layer while sight passes straight through. People eating inside are seen from outside, and in a shop this size that scene is the best display there is.
